New Japanese-Taiwanese omakase opening — cross-cultural concept that does not exist anywhere else in the Orlando market. Chef-led counter, $150–$200 per-guest ticket, audience built around the city's serious dining cohort and inbound destination diners.
02 THE CHALLENGE
A launch in a saturated city carries one risk: if the first 90 days do not produce enough covers to seed a reputation, the math collapses. Kappo Tsan needed a paid system that carried the room from announcement to established booking pace without depending on press to do the work.
03 STRATEGIC APPROACH / GOOGLE ADS & META ADS
Meta launch sequence: chef-introduction video, room-build storytelling, first-course reveals as the content pillars across reels and feed. Targeted into a tight geo-lookalike audience built on the existing Orlando finedining intender pool.
Google captured opening-window search demand: branded defense, "omakase Orlando," "chef tasting menu Orlando," and the Japanese-and-Taiwanese cross-cuisine queries competitors were not bidding on.
04 RESULTS & REVENUE IMPACT
First 30 days of paid: 1,000+ new Instagram followers, and 337 Google conversion events across the launch window — reservation initiations, calls, and direction requests.
Grounding the conversion stack to real covers: ~35% of Google conversions converting to confirmed reservations × 2.2 guests per table = ~260 ads-attributable covers in the launch period. Revenue model at $175 per-guest ticket: ~$45,000 in launch-window ads-driven revenue, or roughly $22,000–$25,000 monthly from paid channels alone — with the 1,000+ warm Instagram audience seeding a second wave of bookings across the following 60–90 days.
